Release 3

Our 3rd Tasmanian Single Malt Whisky release was released in June 2023. This will be a sweet beauty - a 100 litre French Oak Sherry Cask at 45% ABV. Stay tuned for this limited release of only 100 bottles !!!!!
Island Coast Whisky
SOLD OUT. Our first limited release. Released the 4th of January 2023. An ex-French Oak Port Barrel, 100 litres which matured for 8-years. We have only 132 x 500mls bottles available at 44% ABV, which are all individually numbered.
SOLD OUT. Release 2 is in fact 10 bottles at cask strength, 64%, and wow what a kick it has. Supercharged of warm spices of clove and cinnamon, deep red fruits, creating a mind meld of tropical fruits and hot toddies, well-rounded oak tones and butter caramels.
Island Coast Whisky First Limited Release
SOLD OUT. A limited release, an ex-French Oak Port Barrel, 100 litres which matured for 8-years. We have only 132 x 500mls bottles available at 44% ABV, which are all individually numbered. Amber Gold in colour.
Nose:
Sweet Honeycomb and a dash of white pepper, followed by rich mallow and candid orange, even hints of mandarin, mango and stewed apricots pop out to entice the nose. Creamed bananas, mixed with gentle warm spices of clove and cinnamon really finish the nose off, creating a mind meld of tropical fruits and hot toddies.
These wonderful aromas are given further structure and depth with the addition of well-rounded oak tones and butter caramels.
Palate:
Soft sweetness to begin followed by a bright and warming mid pallet that finishes gentle yet lingering.
The initial sweet, fruity tones are welcoming and are then quickly taken over by an oak dryness and spice which, if you’re not paying attention, will distract the pallet from the subtle undertones of dried fruits, cherry and delicate caramels.
Finish:
Although a complex set of aromas and flavours, the finish is subtle and uncomplicated, presenting the drinker with soft dry oak tones and a hint of char that blend well into brown sugar, lemon dops and stewed stone fruits.
